  • 1 1/2 cups (225g) golden raisins appx 150g/cup
  • 1 cup (100g) coarsely chopped walnuts
  • 2 1/2 cups (300g) all-purpose flour,
  • 1/2 cup (1 stick) (113g) salted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs

Instruction For Cherry Fruit Cake

  1. Two loaf pans or eight mini-loaf pans can be used (line bottom and sides with two layers of greased wax paper); alternatively, a tube pan can be used (line bottom with two layers of greased wax paper and grease pan). Use a lot of shortening on the layer adjacent to the Cherry Fruit Cake.
  2. Cut the dates into three pieces and the pineapple, red, and green cherries in half. Mix pineapple, cherries, dates, and pecans in a large basin with your hands. Mix in the sugar thoroughly and let sit for ten minutes.

Note 1: I used a fruit mix including sultanas, raisins, currants, red and green glace cherries, and citrus peel from my neighborhood grocery store. 350g of dried fruits should be used; you can add more of what you like and leave out what you don’t.

Note 2: You can use prepackaged dates that are stiffer or fresh, juicy dates. If you choose to use tougher dates, soften them by adding them to the cooked fruit mixture. If you are using soft, juicy, fresh Cherry Fruit Cake(like Medjool dates), add them to the mixture later on since they won’t need to soften.

Note 3: I use an oven with the fan feature set on for this dish. To ensure that your cake or cupcake bakes at the same pace as mine, raise the baking temperature to 155ยฐC (310ยฐF) if your oven lacks a fan function. This is because the fan-forced function cooks cakes and cupcakes more quickly. ๐Ÿ™‚

Note 4: Before serving, the fruit cake must rest for 48 hours. This will help the Cherry Fruit Cake get lovely and moist and allow the flavors to emerge. It’s best to wait for the ideal texture, but it will still taste good. ๐Ÿ™‚
